Forschner knives are one of the favorites of professional chefs, fishermen and homemakers throughout the world. These knives had their beginnings over 100 years ago when Carl Elsener left the family tradition of haberdashery and turned to crafting knives.
He was the originator and inventor of the fist Swiss Army knife. These knives were first distributed in the US by the Forschner Butcher Scale Company in 1937 and in 1972 the Forschner Company was granted exclusive distribution rights to these implements in the US.
The production company in Switzerland makes roughly 30,000 of the cooking aids every day and 90% is exported to other countries.Today a known symbol of exceptional quality is when you see the Forschner mark on the blade; it is a respected emblem of the craftsmanship and care that is put into every one of the company's products.
The cutlery produced by Forschner today is hand finished at the original Victorinox factory in Switzerland and this is done by the best artists in the field. The Company uses a unique process to temper the metal and this produces a blade edge that is capable of handling being resharpened multiple times without burring or fracture.
Forschner knives include over 300 different types, and each one has a correlating task for which it was meticulously designed and crafted. These are known for their extreme blade strength, and for the amount of resharpening that each blade is capable of sustaining.
Professional chefs use these knives in restaurants around the world due to the reliable performance of the entire product line. Home cooks like to select these products because of their serviceability, craftsmanship and the knowledge that these cooking aids can easily be with them for a lifetime.
With the Forschner knives, you have a wide selection of ergonomically balanced handles and blades from which to make your selection. The handles can be constructed from rosewood, nylon or even a patented composition known as Fibrox.
The Fibrox handles are not only slip resistant, they can be placed in a dishwasher, however the company never recommends putting any of their cutlery in any dishwasher. The rosewood handles remains the most popular and classic of all of the styles.
Each of the blades that are designed by the Forschner Company is made from an alloy of carbon and stainless steel which provides a superbly strong alloy; and the final polishing and sharpening are always done at the company by a craftsman.
The blades themselves come in many different shapes and designs, each being carefully suited to the purpose for which they are intended to be used. Blades that have a wavy appearance are designed for use with things that are easily crushable but have a thicker exterior such as tomatoes and breads.

The blades that are perfectly straight are best used for uncooked meats and chopping veggies. The long, narrow boning blades are useful when you are working with meats that have bone or cartilage like chops and rib meats.
You will need to use one of the boning blades that is wider when you are working with meats like poultry. There is even a curved blade for boning and that is to provide you the maneuverability and flexibility necessary when working close to the bone in any meats.
The Forschner Company even provides their own brand of sharpener steels for you to use with their products or any others that you may have. Each is designed to hone your blades to razor edge fineness. Their steels are constructed so that will be able to sharpen quickly and can even be used to align the edges of those blades which are no longer true.
These finely designed utensils of the Forschner line bring with them over a century old tradition of being the best that the company could produce in order to provide quality to their valued customers.
The Forschner Company stands firmly behind their cutlery and guarantees your satisfaction with all of their products.
